Cardamom Honey Syrup

Honey has many beneficial properties like treating infections, fighting metabolic syndrome, preventing artery hardening, and supporting a healthy gut. Oh, and it’s delicious! Cardamom has antimicrobial, antioxidant, and anti-inflammatory properties. It may help in protecting your heart from elevated cholesterol levels, managing diabetes and lowering liver toxicity. It can even be used for digestive problems and to alleviate oral health problems like cavities and bad breath.

Rosemary Lavender Syrup
Spruce up your next coffee, cocoa, lemonade, or cocktail by stirring in a teaspoon or two. Also try drizzling on top of a bowl of yogurt, ice cream, or oatmeal.
Studies have shown that rosemary has powerful antibacterial, antifungal, and antiviral properties. It has been found to reduce stress and anxiety as well as improving overall sleep quality. Autumn Spice Syrup (Seasonal)
This Autumn inspired syrup isn't Pumpkin Spice...it's better. It's warm, rich, and full of rich flavor with brown sugar and fall spices of cinnamon, allspice, and coriander. It's perfectly paired with cocktails (especially Bourbon), added to apple cider, your favorite coffee drinks, or drizzled over your favorite breakfast. In a world where you can get pumpkin spice everything, we like to mix it up with these cozy, warm autumn flavors.
Did you know coriander are the seeds of the cilantro plant? Full of vitamins, minerals, and antioxidants, coriander is well-known for many health benefits. High in Vitamin K, coriander can help your bones heal and help lower your risk of heart disease. Antioxidants in coriander help remove free radicals from your body, and it also serves as a diuretic, flushing extra sodium from your system (playing a part in reduced blood pressure).
Allspice is high in eugenol which is an analgesic or pain relief agent commonly used in dentistry. Because of the eugenol content, allspice can help combat headaches, muscle cramps, and tooth pain! Allspice is very high in vitamins, minerals, and antioxidant content that can help improve digestion, blood circulation, and dental health. It also boosts your immune system and can provide relief from arthritis symptoms.

Spicy Mule Syrup (Seasonal)
A perfect blend of the flavors of fall with brown sugar and honey rounding out a basic simple syrup infused with chopped ginger and orange. This simple syrup tastes like autumn with every sip. Perfect for cocktails and mocktails, a spicy coffee or tea, or drizzled over your favorite cheddar for a decadent snack.
We wanted to develop a syrup from the amazing flavors we love in a Moscow Mule (ginger) or an Old Fashioned (orange). But this syrup, with beautiful caramel notes from brown sugar, makes for a delicious addition to your chai or latte as well. It will also be perfect added to your charcuterie boards over cheese or figs.

Homestead Seasoning
Elevate any homemade meal with our favorite all-purpose seasoning blend. This paprika-based seasoning is bittersweet, aromatic, and earthy with herbal notes. Rub on or use in marinade for beef or pork, sprinkle over the top of a whole chicken, or dust over some raw veggies before roasting with olive oil. Even great for sausage making (use 1 TBS per pound). This seasoning will make any meal around the table more special!
We don’t use any fillers or anti-caking agents, so keep in a cool, dry place. If your seasoning becomes clumpy, no big deal. It still tastes great! Just smash it with the end of a spoon to get it back to a loose consistency.

Emerald Hills Marshmallows are made with maple syrup, raw honey, and grass-fed gelatin making them not only delicious, but good for you! Hello antioxidant boost and healing collagen! And with the exception of the minute amount of organic powdered sugar that we use to dust them, they are completely paleo-friendly!

Pizza Sauce
This is our absolute favorite and go-to pizza sauce any time we are wood-firing some pies. The sweet San Marzano tomatoes are PERFECT for that fresh tomato flavor and the raw ingredients (garlic and basil) mean that the longer the sauce sits, the more flavorful it becomes. This sauce is one of our favorite parts of making pizza…we hand-crush the tomatoes, hand-tear the basil, and thinly slice the garlic. The fragrance of this sauce and the smell of an oak fire always permeate our memories of pizza night.
If you aren’t making pizzas or you have some sauce leftover, we love using extra sauce for meatball subs or chicken parmesan! Keep Refrigerated for up to 3 weeks. Sauce can be frozen but becomes a little watery. Be sure to leave some head-space in the jar if freezing in glass.

Wood-Fired Flatbread
Pizza nights are a staple at Emerald Hills! In 2018, we purchased a small Ooni Pizza Oven. We already enjoyed pizza nights, but needless to say, our Ooni changed our family culture. Food was always important to us, and we always enjoyed cooking together, but now pizza night was a full-on event and we loved it. When we sold our house in the suburbs and moved to the country, we upgraded to an even larger oven and began using oak harvested from our own trees!
These handmade yeasted flatbreads are made using our favorite pizza dough recipe and fired in our pizza oven! They can be enjoyed as is, topped and air-fried or baked for easy pizza, or cut up and drizzled with your favorite oil, herbs, honey, or seasonings for a snack! Delicious paired with Emerald Hills Pizza Sauce and your favorite mozzarella.
Ingredients: 00 flour, water, salt, sugar, yeast, olive oil
Our favorite recipes:
Margherita Pizza: top with Emerald Hills pizza sauce and your favorite whole mozzarella cheese. Pull or cut the cheese into medallions and disperse across the top of the pizza. Bake at 425 for 8-10 mins or until cheese is bubbly and browning. When you remove pizza from the oven top with fresh basil.
Jalapeno Honey Pizza: top with Emerald Hills pizza sauce (or your favorite variety), shredded mozzarella cheese, pepperoni, and fresh sliced or pickled jalapenos. Either are delicious! Bake at 450 for 7-9 mins until cheese is melted and bubbling and pepperoni are starting to crisp around the edges. Pull from the oven and immediately drizzle with your favorite honey (don’t miss a drizzle on the crust).
Breakfast pizza: top with your favorite shredded or chunked cheddar, breakfast sausage or bacon crumbles, and crack an egg in the center. Bake at 375 until cheese is bubbly and egg is set to desired doneness (10-15 mins). When pizza comes out of the oven, top with green onions and fresh cracked pepper.
Breakfast flatbread: spread your favorite nut butter or nutella generously over the bread. Slice and top with bananas, drizzle with honey, and sprinkle some granola over the top.
Cheesy bread: create a quick garlic oil spread by combining 2 tbsp of olive oil, 1 clove of minced or pressed garlic, and sea salt. Stir well and then spoon over the top of the flatbread and distribute evenly. Top with pieces of mozzarella and broil in the oven until cheese is bubbly and browning. Remove bread from oven and immediately top with fresh chopped rosemary or basil. Cut into rectangular pieces for serving.
Pear & Goat cheese flatbread: top your flatbread with a drizzle of olive oil, thinly sliced pears, and goat cheese crumbles. Bake in a preheated oven at 375 for about 12-15 mins. After removing from the oven, immediately drizzle with raw honey and sprinkle with fresh thyme.
AIR FRYER INSTRUCTIONS:
Note: all air fryers are slightly different…you may need to adjust your cooking time slightly depending on your machine and model.
Add 2 flatbreads to your air fryer in a single layer bottom-side down. Cook at 360 for 2-3 mins. Flip and cook for another 1-2 mins at 360. Add your toppings. PRO-TIP: add your air fryer rack to ON TOP of your topped pizzas. The hot air circulating, may blow off some of your toppings and the air fryer rack will help keep them in place.
Air fry the pizzas at 360 for 2-5 mins (based on your desired doneness) until heated through and cheese is melted and bubbly.

Strawberry Basil Syrup (Seasonal)
This fruity simple syrup is incredible in lemonade, summer spritzers, to top shaved ice or ice cream, or to drizzle over your favorite french toast, pancakes, or angel food cake.
Strawberries are good for your whole body. They naturally deliver vitamins, fiber, and particularly high levels of antioxidants known as polyphenols, without any sodium, fat, or cholesterol. They are among the top 20 fruits in antioxidant capacity and are a good source of manganese and potassium. Just one serving, about eight strawberries, provides more vitamin C than an orange. The eugenol in basil can block calcium channels, which may help to lower blood pressure. The essential oils in the herb can help to lower your cholesterol and triglycerides. Basil also contains magnesium, which can help to improve blood flow by allowing muscles and blood vessels to relax.
